Pumpkin Pie 1 1/2 cups cooked pumpkin 1/2 cup white sugar 1/4 cup brown sugar 1/2 teaspoon salt 2 teaspoons cinnamon 1 teaspoon ginger 1/2 teaspoon nutmeg 1/2 teaspoon cloves 3 slightly beaten eggs 1 1/4 cups whole milk 1 6-oz can evaporated milk 1 - 3 tablespoons dark molasses 1 9-inch unbaked pastry shell Preheat the oven to 350 degrees. Thoroughly combine the pumpkin, sugar, salt, and spices, then blend in the eggs, milk, and evaporated milk. Stir until no lumps remain. Stir in the molasses use as much to suit your tatstes. Pour the batter into the unbaked pastry shell. Bake for 50 minutes, or until a toothpick inserted in the middle comes out clean. If the crust edge appears to be getting dark before the pie is done, put foil on it.
